Citric acid HOOC-CH₂-CCOOH-CH₂-COOH or ₂COOH is a tribasic carboxylic acid. White crystalline substance, melting point 153 °C. It is highly soluble in water, soluble in ethyl alcohol, slightly soluble in diethyl ether.
